Johann WIRTH birth 1690 Occupation: Weißbäcker Oschatz ,Torgau-Oschatz,Sachsen

Looking for information about Weißbäckers or Bakers and Millers.
I am trying to research the position they held in the towns and villiages during the 16th to 18th centuries.
Journeymen , masters and keepers of the Guildbook.
Also I would like to discuss the various spelling of the family name.
